Horseradish Amoracia rusticana
One of the Brassicaceae family - which includes better known members such as broccoli and cabbage, horseradish grows up to around 5 feet tall in the wild.
It's the root of the plant however that produce the amazing taste and scent.
Only when cut do the plants enzymes break down and produce the mustard oil so familiar to most of us.
Horseradish is used in our elderberry syrup.
