Add all the ingredients to a high-speed blender (or food processor) and process until completely combined into a mixture that can be handled and shaped.
Roll the mixture into small golf sized portions and place on a small tray lined with parchment paper. Place the tray in the fridge to chill for 20 minutes.
Remove from the fridge and coat each ball in desiccated coconut.
Keep refrigerated in an air tight container. Remember to do a happy little matcha dance after each power ball you eat.
